Capers and Halibut




Among the largest of the "flat fish", the halibut fillet has a very lean, low-calorie, protein-rich and carbohydrate-free meat. It also offers a good supply of Omega-3 fats, making it a protective food for cholesterol levels.

Ingredients

2 (6-ounce) white fish filets
¼ cup all purpose flour
2 tablespoons olive oil
⅓ cup dry white wine
2 tablespoons capers, drained
5 tablespoons cold unsalted butter, cut into cubes
2 tablespoons lemon juice
2 tablespoons chopped flat leaf parsley

Directions

Dredge the filets in flour, shaking off the excess. In a large skillet, heat the olive oil over medium-high heat. Add the filets to the pan and cook until browned, about 3 minutes per side. Once cooked, remove the filets from the pan and set them aside on a plate. Pour out any excess oil, then add in the white wine. Whisk vigorously while the wine reduces, scraping up any bits stuck to the bottom of the pan. Continue to simmer and until the wine is reduced by half. Turn the heat to low and add in the capers and butter. Whisk continuously until the butter is fully melted into the sauce. Stir in the lemon juice and parsley. Add the fish back into the pan and turn to coat, spooning extra sauce over the top.

Imagine being on one of the beautiful coasts, where the moon is reflected in the Adriatic Sea and the breeze offers pleasant moments of refreshment from the summer heat: these are the most pleasant hours of the day, where you can relax with friends, tell each other about the days and enjoy the crunchiness of the octopus in a tasty sandwich. At this point a beer is a must, you choose which one.

The octopus sandwich best represents the typical culinary philosophy of Puglia: usually caught by hand, harvested among the rocks and stones that represent a large part of the Adriatic coast of the region, the octopus can also be bitten raw on the spot, processed on the spot, or grilled so as to take on a particular texture and a smoky flavor.

How to prepare the sandwich with roasted octopus and cherry tomato salad

To prepare a perfect roasted octopus sandwich with salad and cherry tomatoes, first carefully clean the octopus. Remove the teeth with your hands or with the help of a fork, then take the head and turn it upside down, leaving the eyes that you can remove once cooked. Place the octopus on the grill, sprinkle it with a sprig of celery, if possible, as if it were a brush, to flavor it. In the absence of this, rosemary is also fine. The embers should be left light, so that the cooking proceeds slowly but evenly. Many people consider the octopus cooked once they see the typical curl of its tentacles. When it begins to brown, grease it with a marinade of oil, lemon, pepper and salt. Once cooked, remove the eyes and use it as a filling for the sandwich with salad and tomato properly washed.


 

TAGLIATELLES À LA TRUFFE 



Les tagliatelles aux truffes sont un plat délicieux et élégant à préparer pour une occasion spéciale, pour épater vos convives et satisfaire votre palais. La truffe est un champignon hypogé (souterrain) et constitue l'un des aliments les plus chers du marché. Les truffes italiennes sont divisées en noires (comme Norcia, Ombrie) et blanches (également appelées Alba ou Piémontaise, Piémont). Par exemple, 100 g de truffe blanche, soit 3,6 onces, coûtent environ 600 euros, alors que la même quantité de truffe noire ne coûte « que » 100 à 150 euros. Son nom dérive du mot latin tuber, qui signifie littéralement escrescenza di terra « affleurement terrestre », un nom qui rappelle en réalité sa forme irrégulière. La truffe pousse spontanément en symbiose avec certains types de plantes et est recherchée par les chiens spécialement dressés à cet effet. La truffe est composée à 73% d'eau et est riche en protéines. Il est faible en gras et ne contient pas de cholestérol.

Appréciée depuis l'Antiquité, la truffe aurait des origines divines. Même les Romains étaient très friands de truffes. Selon la légende, la truffe serait née de la rencontre de la pluie et du tonnerre. Ce précieux champignon souterrain, apprécié des connaisseurs, s'accorde parfaitement avec des plats délicats comme le risotto ou les pâtes fraîches aux œufs (tagliatelles ou tagliolini), mais il est également savoureux avec des œufs pochés ou avec un succulent filet de bœuf. Pour préserver le goût précieux de la truffe, il faut cependant être prudent : c'est en effet un ingrédient assez délicat à cuisiner et à conserver. La règle de base avant la cuisson est d'enlever soigneusement toute la terre qui le recouvre, et de le trancher très finement, avec l'emporte-pièce approprié, quelques minutes seulement avant de servir, pour conserver tout son arôme. J'ai choisi la truffe noire pour ce plat de pâtes, mais, si vous préférez, vous pouvez opter pour la truffe blanche d'Alba !

INGRÉDIENTS

360 g de tagliatelles fraîches
55 g (2 onces) de beurre
50 ml (environ ¼ tasse) d'huile d'olive (extra vierge)
1 gousse d'ail, pelée
60-70 g (environ 2-2,5 oz) de truffe noire
Sel de mer et poivre fraîchement moulu

DIRECTIONS

Préparez des tagliatelles fraîches selon la recette. Nettoyez la truffe. Séchez-le soigneusement avec un chiffon humide pour éliminer l'excédent de terre, puis brossez-le avec une brosse moyennement dure pour éliminer toute trace d'impuretés. Séchez-le soigneusement avant de le trancher. Trancher (environ 1/2) finement avec un emporte-pièce adapté et réserver. Dans une grande casserole, porter à ébullition beaucoup d’eau légèrement salée. Dans une poêle, faites fondre le beurre à feu doux, puis ajoutez l'huile. Ajouter l'ail et cuire jusqu'à ce qu'il soit légèrement doré. Retirez-le ensuite, éteignez le feu et ajoutez les flocons de truffe préalablement tranchés. Gardez-en un peu de côté pour la décoration finale du plat. Faites cuire les pâtes al dente pendant 3 à 4 minutes. Égoutter les pâtes en réservant 120 ml (½ tasse) d'eau de cuisson. Ajoutez l'eau de cuisson à la sauce aux truffes, puis les pâtes. Mélangez délicatement. Garnir de nombreux flocons de truffes fraîches et servir immédiatement.


Pasta with spicy salami 



A delicious first course simple and rich in taste, in fact you only need very few ingredients to quickly prepare a good and tasty dish. To prepare the pasta with spicy salami I used cherry tomatoes but you can also use San Marzano tomatoes or if you don't have fresh tomatoes use peeled tomatoes or tomato sauce. I recommend that you also look at other recipes for pasta dishes, you will surely find some other recipes to try. Pasta with salami is a very simple dish to prepare but irresistible when it arrives on the table steaming. Savory and tasty, it will be a real surprise for lovers of intense flavors.

Ingredients

320 g pasta
15 g triple tomato paste
50 g olives
60 g onion
50 g spicy salami
Basil
salt
extra virgin olive oil

Preparation

Let's start preparing the pasta with spicy salami, pour some water into a pot and when it boils, add the salt and the pasta and cook it according to the time indicated on the package and in any case al dente. Clean the onion and chop it coarsely, leaving larger pieces quietly. Wash the cherry tomatoes and cut them in half. Slice the spicy salami and then cut each slice into small pieces. Pour extra virgin olive oil into a pan, add the onion and brown it for a few minutes, then add the cherry tomatoes and olives and cook for a few minutes, stirring occasionally. Now add the spicy salami and the triple concentrate that you will dilute with a drop of pasta cooking water. Continue cooking the sauce for about ten minutes. When the pasta is cooked, drain it and set aside half a glass of cooking water that you can then add to the sauce if necessary. Pour the pasta into the pan with the deviled sauce, mix well and stir everything, if the sauce has thickened too much, add a few tablespoons of pasta cooking water, serve the pasta with spicy salami hot. Plate up and serve to your guests.


Pizzaiola eggs



Pizzaiola eggs are a real delicacy and represent an alternative and very delicious way to prepare eggs. It involves preparing a tomato puree sauce to be flavored with green olives and dried oregano to break the eggs to cook for a few minutes. Then you will need to add the diced mozzarella to melt and thus create a creamy and stringy dish to lick your lips. Scarpetta with fresh or toasted bread are mandatory. Eggs pizzaiola, delicious second course, very easy to make but very tasty. A second course to which you just need to add some bread to make the scarpetta and lunch or dinner is ready !! The cooking of the eggs goes to taste, I like it soft, so then I can make the scarpetta with bread, if you like the egg well cooked, just continue cooking until the cooking point you prefer.  Let's take a look at the complete recipe.

Ingredients

2 eggs
200 ml tomato puree
120 g mozzarella
8 green olives (pitted)
1 pinch salt
1 pinch dried oregano
A few slices of white onion
4 tbsp extra virgin olive oil

Steps

Take a saucepan and briefly fry the chopped onion in 4 tablespoons of extra virgin olive oil. Pour in the tomato puree and cook over low heat for about 5-7 minutes. If necessary, add 50 ml of lukewarm water. Then add salt, the pitted green olives and a pinch of dried oregano. Let it take on flavor for a few minutes. At this point, crack the eggs, making sure that they remain whole. Cook for 2-3 minutes. Then add the diced mozzarella and a sprinkling of dried oregano. Continue cooking, covering with a lid until the mozzarella is melted. Turn off the stove, let it cool for a few minutes and bring to the table. Enjoy your meal!

 

Artichoke and potato croquettes



Artichoke croquettes are a vegetable-based main course that will surely satisfy even the most demanding palates. Artichoke and potato croquettes are a delicious finger food ideal to serve as an appetizer in a buffet or as an appetizer in a lunch or dinner. They are prepared with one of the seasonal ingredients, artichokes, so they will surely be appreciated by your diners, both young and old. In fact, who doesn't like kibble? Ingredients

3 Artichokes
2 Potatoes (medium size)
1 Eggs
3 tbsp Cheese (grated)

Preparation

First of all, clean the artichokes: remove the stem, the tougher outer leaves and cut off the tips. Cut each artichoke in half and, with the help of a small knife, remove the inner beard. Cut the artichokes into slices and let them rest in a bowl with acidulous water for about 10-15 minutes. After the time has elapsed, rinse the artichoke slices, pat them dry with a paper towel. Then take a saucepan and heat 2-3 tablespoons of extra virgin olive oil. Then add the artichoke slices and stew them for 5-6 minutes, basting with a cup of hot vegetable broth (alternatively warm water). Season with salt and pepper. At this point, drain them and put them in a kitchen mixer. Blend them to obtain a puree. In the meantime, rinse the potatoes under running water to remove any impurities. Put them in a saucepan covered with water and boil them. Once cooked, drain them, let them cool briefly and peel them. Then mash them with a potato masher. In a bowl, combine the mashed potatoes, artichoke puree, egg, salt, pepper, chopped garlic and parsley, grated cheese and breadcrumbs just enough to make the mixture manageable. Mix everything together to obtain a homogeneous dough. Shape the kibble. Fry them in plenty of hot extra virgin olive oil, browning them on both sides. Drain them, on frying paper and serve hot. It is a delicious variant of the classic bresaola with arugula, cherry tomatoes and parmesan cheese, with the typical flavors given by hazelnuts and apples. You can also add a drizzle of balsamic vinegar, which in addition to giving that extra touch to the composition of the dish, will make your bresaola even more delicious.

Ingredients

250 g bresaola
An apple
100 g hazelnuts
Parmesan cheese flakes to taste
Balsamic vinegar

A little parsley

Steps

On a serving plate, arrange the bresaola cut into slices. Cut the apple in half, remove the core and cut the wedges. Peel them and place them on top of the bresaola. Add the hazelnuts and Parmesan cheese flakes. Season, if you like, with a drizzle of balsamic vinegar and garnish with a few parsley leaves.

Fun fact: bresaola is a typical cured meat of Valtellina produced exclusively with adult beef meat. It is particularly suitable in low-fat diets and in diets for athletes. Bresaola, in fact, has a low fat content but a high presence of mineral salts, a considerable protein content and high digestibility. However, it has a flaw: during its curing, sodium and potassium nitrites and nitrates are added, which if ingested in large quantities can be dangerous for our body. Nutritionists therefore recommend eating this cured meat in moderation. In addition, due to the high presence of potassium, it is strongly discouraged for those suffering from hypertension. The origin of the name bresaola is not known: there are those who think that it derives from a gland present in the lymphatic system of cattle, called brisa, essential for the production of bresaola; Others, on the other hand, refer to the "brasa", to the grill, because in ancient times, the rooms where the cured meat was aged were heated by braziers.

Carbonara pasta with zucchini 😋



Pasta alla carbonara is a characteristic dish of Lazio and more particularly of Rome, although many theories claim that it was invented by the charcoal burners of the Apennines, by a Neapolitan cook named Cavalcanti or even by the Americans. Carbonara is a pasta dish prepared with popular ingredients and an intense taste. The most traditionally used type of pasta is spaghetti, although other types of long pasta such as linguine, or some types of short pasta such as penne and, in particular, rigatoni, are well suited. A creamy dish with a sweet flavor and simple to prepare. A variant of the classic carbonara is the version with the addition of zucchini, which is very tasty to try.

Ingredients

400 g of Spaghetti, vermicelli, or bavette
1 onion
200 gr of bacon or guanciale
2 eggs
300 gr of zucchini
4 tablespoons of extra virgin olive oil
Pecorino Romano
Pepper
salt
basil or mint

Preparation

Cut the zucchini into slices or strips as you like. In a frying pan add 4 tablespoons of extra virgin olive oil and heat the oil a little add the zucchini to the pan with the oil and cook until golden brown over medium heat add a little salt. In another pan, add the diced bacon or guanciale and cook until crispy over medium heat. Finely chop the onion and brown it In the meantime, beat the eggs in a bowl and add the pepper and pecorino cheese. Keep a ladle of cooking water and drain the pasta al dente. Then pour everything into a large bowl, bacon, zucchini, pasta, cooking water and add the beaten eggs and stir quickly for a few seconds until a cream is formed. Be careful not to overcook the eggs, they must be creamy and not cooked-fried. Serve the dish with a little pecorino cheese and fresh basil or mint if you prefer.


 

Paccheri with cherry tomatoes and seafood 



Tasty, simple to make and perfect for the summer season, paccheri with seafood is a rich dish that will make you feel the sea breeze at the table. Paccheri are a type of traditional Neapolitan pasta in the shape of giant macaroni, generally made with durum wheat semolina. The term derives from the ancient Greek of the first founders of Parthenope and is still used in the Italian language as "pacca", or a slap given with an open hand, without hostile intentions. Hence the name of the type of pasta, which is much larger than normal, usually accompanied by succulent sauces. Paccheri can also be stuffed, with ricotta or other ingredients, and served with meat sauce.

INGREDIENTS 

160 gr Paccheri pasta
400 gr Mixed fish (squid, squid, cuttlefish, octopus, mussels, clams)
100 gr Tomato pulp
Cherry tomatoes 100 g
1x Onion
1x Lemon
White wine
Parsley
Chili pepper
Black pepper
Salt to taste
Extra Virgin Olive Oil to taste

PROCEDURE

Wash the mussels and clams well and transfer them to a pot full of water. Cover with the lid, turn on the heat and let the cooking open them all. As soon as they are all open, remove the pot from the heat and remove the clams from their shells, leaving only a few for decoration. Clean, peel and cut the squid, squid, cuttlefish and octopus into small pieces and place them in a bowl. In a wide-bottomed saucepan, add a drizzle of oil, chopped onion and a pinch of chili pepper. Brown the onion, add the fish cut into small pieces, add half a glass of wine cut the cherry tomatoes in half and let the alcohol evaporate. Add the tomato sauce, season with salt and cook for about 10 minutes over low heat. Add the mussels and clams and cook for a few minutes. Remove the sauce from the heat, add the chopped parsley and the zest of a grated lemon. Cook the pasta in plenty of salted water and, when there are 2 minutes left before the end of cooking, move the pasta into the saucepan with the sauce. Finish cooking with the sauce, adding cooking water if necessary. Remove from heat, plate up and add a pinch of parsley, black pepper and grated lemon zest before serving.


Spaghetti with mussels and pecorino



Pasta with mussels and pecorino cheese is a surprising first course. The idea of combining spaghetti with mussels with cheese might initially seem a bit weird, but I assure you that the combination was perfectly successful. Mussels go very easily with many ingredients and I love discovering new ones every time. This dish, at the moment, is one of my favorites, strangely enough my wife also likes it, so I can prepare it even when we are alone and I want a simple dish to make but with a particular taste.

Ingredients

1 kg of mussels
70 gr of pecorino cheese
salt
Pepper
basil
extra virgin olive oil
1 clove of garlic

PROCEDURE

Clean the mussels thoroughly. Sauté the garlic with the oil in a large pan. Then add the mussels. Put a lid on and wait for them to open. Now remove the mussels from the shells and set them aside with some filtered cooking water. In the remaining filtered cooking water, mix the pecorino cheese. Once the pasta is cooked in plenty of lightly salted water, drain it al dente. Then move it to the pan with the mussels and stir it with the prepared water and pecorino cheese, pepper and basil. Your pasta with mussels and pecorino cheese is ready to be served.
