Pumpkin soup
Pumpkin soup is a very simple and comfortable preparation. With low temperatures, a hot dish regenerates the spirit and mind. A recipe that is not too caloric, quick and really tasty. Let's see what we need to prepare the pumpkin soup.
Ingredients
200 g Yellow pumpkin
1 onion
1 celery stalk
1 carrot
2 Potatoes
100 g Stale bread
1 sprig Thyme
salt and pepper
Preparation
Start the preparation of the pumpkin soup by carefully washing the vegetables, remove the skin of the onion, potatoes and pumpkin, then reduce everything to coarse pieces. In a large saucepan, add a tablespoon of extra virgin olive oil, add the celery, carrot and onion, then let it brown for a few minutes over medium-high heat. Add a liter of cold water and turn up the heat. When it starts to boil, add the potatoes and let it boil for about 15 minutes, after which add the pumpkin and finish cooking for another 15 – 20 minutes. When the potatoes and pumpkin are soft, then turn off the gas and blend everything with an immersion blender. Season with salt and pepper and let it cool. Cut the bread into 1 cm cubes, brown them in a pan with a drizzle of extra virgin olive oil (they just need to become crispy, so it takes a few minutes) and a sprinkling of pepper. Place the pumpkin soup in small bowls with a sprinkling of pepper, a few thyme leaves and the crispy croutons.
