Artichokes stuffed with walnuts, cheese and bread
Artichokes are vegetables that lend themselves to being cooked in many different ways. Artichokes stuffed with walnuts, cheese and bread are a second course rich in flavor and simple to prepare. Ingredients
8 artichokes
120 g stale bread
50 g walnuts
50 g Parmigiano Reggiano
fine salt to taste
black pepper to taste
50 g milk
1/2 lemon
chopped parsley to taste
extra virgin olive oil to taste
water to taste
1 onion
Steps
Start the preparation of the Artichokes stuffed with walnuts, cheese and bread from the filling. Remove the crust of the stale bread, then cut the crumb into cubes. Transfer everything into a bowl, then add the milk, a pinch of salt and black pepper. Cover with plastic wrap and let it rest for about 30 minutes. Finely chop an onion then put a non-stick pan on the heat, pour a drizzle of extra virgin olive oil and fry it for a few minutes. Once the onion has taken on an amber color, turn off the heat and let it cool for a few minutes. With a knife, chop the walnuts and add them to the soaked bread. Add the egg, grated Parmesan cheese and finely chopped fresh parsley. Finally, add the onion and mix everything. Once you have prepared the filling, devote yourself to cleaning the artichokes. Remove the toughest leaves, then cut off the tips with a knife. Also remove the beard inside and immerse the artichokes in water acidulated with the juice of half a lemon, this will prevent the artichokes from blackening. Remove the stems of the outermost hard layer and place in the bowl. Boil the artichokes in salted water for about 15 minutes, then when cooked, drain them and let them cool for a few minutes. Stuff the artichokes then place them inside a baking dish greased with oil. Add the stems of the artichokes cut into chunks. Sprinkle the top of the artichokes with parmesan cheese and finally add about 50 ml of water, then season with a drizzle of extra virgin olive oil. Bake in a preheated oven at 250°C for about 20 minutes. When cooked, take it out of the oven and serve the artichokes stuffed with walnuts, cheese and bread to your diners.
