Potatoes Capricciosa
Potatoes alla capricciosa are a delicious and simple second course to prepare. Excellent second course with very few ingredients. In this recipe, we will use the ingredients of the capricciosa pizza to create a potato salad that is rich in taste. Also perfect for a meal out of town. Potato salad is a versatile recipe that allows you to indulge your imagination.
Ingredients
400 g potatoes
3 artichokes
50 g black olives
50 g cooked ham
100 g mozzarella
extra virgin olive oil to taste
fine salt to taste
black pepper to taste
Steps
Start the preparation of the Potatoes alla capricciosa by boiling the tubers. Place the potatoes in a pot with cold water and cook for about 45 minutes. The cooking time depends on the size of the potatoes. When cooked, drain them, remove the peel then cut them into chunks. Let cool completely. Clean the artichokes and cut them into slices. Put a non-stick pan on the stove. Add a drizzle of extra virgin olive oil and a clove of garlic. Heat for a few moments then place the artichokes in the pan. Season with salt and cook the artichokes for about 10 minutes, adding a drizzle of water if necessary. To speed up the process you can use artichoke hearts in oil. When the potatoes are completely cold, add them to the artichokes. Add the black olives, the cooked ham cut into strips and the mozzarella. Season with salt and pepper, then season with extra virgin olive oil. Stir and enjoy the Potatoes alla capricciosa together with your diners.
