Ratafia with cherries
Ratafia with cherries is a very simple liqueur to prepare, delicious cold in summer or to warm up the coldest evenings. A fruit macerate that is prepared in summer with very few ingredients. A liqueur with an ancient flavor that warms the heart and gives that sense of harmony, typical of the old times. The forgotten flavors of the past. Ingredients
1 kg Organic cherries
1 l Pure alcohol at 95° (alternatively grappa)
1.5 kg Sugar
1 l Water
Preparation
Pick cherries or sour cherries, they must absolutely be organic, so if you can't find them on the market, look for a farm or a farmer who has organic them. Once the cherries have been harvested, wash them with running water, then place them inside a tablecloth or cloth and let them dry for 4 – 5 hours. They must dry out and lose a little intrinsic moisture. Place the dried cherries in a glass container with a kg of sugar and close hermetically. Let it rest in the sun for 40 days. After the days, filter the macerate with a sieve and put the filtrate in a large bottle. Boil the remaining sugar with the water, when you have created a syrup let it cool completely. Combine the alcohol with the cold syrup and pour everything into the container with the cherry macerate. Mix everything together and let the cherry Ratafia rest for at least a month before consuming it. The cherry Ratafia requires a bit of work, but I assure you that the result will be really optimal.
