Mascarpone with berries and Balsamic Vinegar 🍨
Delicious mascarpone and berries cream spoon dessert very easy to make, with a delicious balsamic vinegar. A cup with berries that is also perfect to serve in a party buffet for adults and children. I will also explain how to easily make the topping at home, but if you don't have time or desire you can use the topping that you can find at the supermarket or berry jam. You can use fresh or frozen berries. I know that many people don't really want to know about consuming raw eggs so if you want to pasteurize eggs for this dessert I suggest you follow the procedure in which I explain how to do it in this tutorial, or buy already pasteurized eggs at the supermarket.
Ingredients
250 g Mascarpone2 egg yolks2 tbsp Sugar250 g Berries (or frozen)100 g SugarBalsamic vinegar to taste
Preparation
Let's start preparing the mascarpone and berries cream, divide the eggs, pour the yolks into a bowl together with the sugar, work them in a planetary mixer with an electric whisk to make them puffy, pour the mascarpone and continue to work the cream with an electric whisk to whip the mixture. Place the bowl in the refrigerator covered with plastic wrap. Wash the berries and pour them into a saucepan together with the sugar and a tablespoon of lemon juice, put on the heat and cook for about 10/15 minutes, fresh fruit takes a little longer than frozen fruit. Now pass everything over a sieve in order to filter the mixture, if you want to get a smoother and filtered mixture use a tightly woven strainer. Place the topping in the refrigerator, it will keep for a few weeks. Now take the mascarpone cream from the refrigerator. Pour a few tablespoons of mascarpone cream into the glasses or bowls of the topping and finish with the topping, place the mascarpone cream and berries in the refrigerator until ready to serve.
