Eggplant tower with basil ricotta πππΏπΏπΏ
Try the eggplant tower it's a great appetizer to any meal. Topped with ricotta basil and cheese and fresh tomato sauce. Yes amazingly delishess! Perhaps calling it "eggplant parmigiana revisited" is a gamble. A bit too healthy as a recipe, but the ingredients are more or less the same. Almost a single dish since it contains mozzarella, eggplant, tomato sauce and slices of bread.
A convenient dish, since you can prepare it well in advance and leave the heating and service at the last moment. And, if you do not want to turn on the oven even for 10 minutes, there is no problem: a microwave pass is enough to make the mozzarella stringy as it should be and the vegetables just warm, so as not to alter any flavor, but make the eggplant tower pleasant to taste. A recipe without guilt, light and tasty. Eggplant time. Those purple vegetables are waiting for you and your culinary creativity. Here, for example, a bit of inspiration if you are looking for a recipe with grilled eggplant :-). Juicy, soft, enveloping and tasty. Perfect to be served hot or cold.
Ingredients
1 large eggplant200 g ricotta cheese13 basil leavesa drizzle of oiltomatoessaltPepperEVO oil
Procedure
Wash the eggplant well and cut it into slices of about half a mm by cutting the ends. Heat a non-stick pan or grill the eggplant for a few minutes on both sides then place them on a plate and put a pinch of salt on top. Put the ricotta in a chopper with a little pepper, a pinch of salt and basil leaves washed then blend until creamy. Wash the tomatoes and slice them. Then assemble the tower alternating eggplant, ricotta, tomato, a few drops of oil and so on until you get a tower composed of three slices of eggplant, and three slices of tomato topped with ricotta. Serve at room temperature. Enjoy your meal!
