Soaked anchovy pie



The recipe for the soaked anchovy pie represents a really simple, genuine and very tasty seafood dish of the culinary tradition of Campania, but in general of Southern Italy. This dish can be served as an appetizer but also as a main course. You only need a few ingredients to make it: bread crumbs, fresh anchovies, garlic, parsley, a drizzle of vinegar and oil. Cooking can be done in a pan or in the oven and in the latter case it is possible to have a nice crispy breading. As a dish it is certainly very healthy as anchovies are rich in good fatty acids for our body, such as omega-3 which keep LDL cholesterol at bay. Oily fish is rich in vitamins A, B and also contains a lot of calcium... In short, one more reason to eat anchovies, don't you think?

Ingredients 

400 g anchovy (Already cleaned and boneless)
120 g bread breadcrumbs
chopped parsley
5 mint leaves 
white wine vinegar (Alternatively the juice of 1 lemon)
1 clove garlic
extra virgin olive oil
salt

Preparation

I used a 20 cm springform pan. Lightly grease the bottom of the mold with extra virgin olive oil and sprinkle with breadcrumbs. Arrange the anchovies in a radial pattern with the skin facing down. Crumble the breadcrumbs (I had whole meal bread and I used that, you use whatever you prefer). Add salt, a clove of finely chopped garlic, a good handful of parsley, a few mint leaves and a little vinegar (it takes very little, it serves to give flavor... a couple of tablespoons are enough). Now we have to put the anchovies in a radial pattern again, but this time the skin is turned towards us. At this point put more breadcrumbs, parsley and a few mint leaves. Also add a drizzle of extra virgin olive oil and bake at 180°C for 25-30 minutes. Here is the result! Anchovies cooked like this are delicious!
