Meatloaf with Mushrooms
Meatloaf with mushrooms a super easy and tasty second course, delicious and not at all long to prepare. In the last few months I have made stuffed meatloaf and also meatloaf with artichokes and this time I thought of doing it with mushrooms as well. Autumn for me is the same as mushrooms... I love them, I would really put them everywhere and I like them very much but unfortunately they still cost a lot so for this time I decided to buy the frozen ones but I assure you that the meatloaf will be delicious all the same and very tasty because I also added speck and cheese inside and it is really a bomb so, so good that we all did an encore...!And now...Well, fasten your apron...!
Ingredients
For the meatloaf500 g Minced meat100 g Sausage50 g Breadcrumbs50 g Parmigiano Reggiano1 eggSalt
For the filling400 g Mushrooms100 g Speck100 g cheese
Preparation
Cook the mushrooms for 10/15 minutes in a pan with two or three tablespoons of extra virgin olive oil and a pinch of salt. If you use frozen mushrooms like me, cook them until the water has dried completely. If you use fresh mushrooms, clean them well from the earth with a small knife and cook them in the same way. Put the minced beef in a bowl together with the sausage removed from its casing. Add the breadcrumbs, grated Parmesan cheese, a pinch of salt, a whole egg and mix everything with your hands so as to have a homogeneous mixture. Take a sheet of parchment paper and create a fairly regular rectangle with the meat dough. Put all the slices of speck on top of the rectangle of minced meat and the sliced cheese on top. Cover the cheese layer with sautéed mushrooms. Gently roll the meatloaf on itself and close it. Close the sheet of parchment paper like a candy. Bake the meatloaf with mushrooms in a preheated oven at 180 °C for about 30 minutes then open the parchment paper and let it cook for another 15 minutes. Remove the meatloaf with mushrooms from the oven and wait a few minutes before cutting it into slices.
VARIATIONS AND TIPSInstead of breadcrumbs, in the meatloaf dough you can put the crumbs of a sandwich soaked in milk and squeezed. You can not put the sausage and replace with garlic. You can replace the speck with cooked prosciutto. Do not overdo it with salt in the meatloaf dough.
