Sausage, black olives and rapini 



Turnip greens and sausage is a traditional dish with a strong flavor of Apulian cuisine. It is a simple recipe to make and that gives great satisfaction, thanks to the genuineness of these ingredients. The combination of turnip greens and sausage is perfect and the final result is very tasty and delicious on the palate! This delicious dish is prepared by stewing turnip greens in a pan with sausage. As it is a very popular recipe in southern Italy, there are several cooking techniques. Let's see how I prepared it.

Ingredients

300 g Sausage
400 g Turnip greens
2 wedges Garlic
1 tbsp Extra virgin olive oil
Salt 1 pinch
Black pepper
Hot chili pepper
1 ladle Water
some Black olives

Steps

After washing and cutting the turnip greens, blanch them for 10 minutes in boiling salted water. In the meantime, to give a safe and accentuated flavor to the turnip greens with sausage, I sauté with garlic, oil and chili. Add the previously blanched turnip greens to the sauté. A pinch of black pepper for flavor. Now I add the black olives to enjoy the dish at its best and delight the palate. Now that I have all the ingredients in the pan, I can add the sausage and stew it gently, for 30 minutes, adding a ladle of turnip greens cooking water. Stir often to cook the sausage evenly, adjust salt if necessary and add more water if needed. Our delicious dish is ready! Enjoy your meal!
