Pear cake with almonds and chocolate
If there's one thing I'm really good at, it's definitely turning the recipes upside down. I spend hours and hours looking for dishes to replicate and then inexorably I find myself changing the doses or ingredients (or maybe both). This is the case of the pear cake with almonds and chocolate, born as a recycling recipe (to dispose of overripe pears), it soon became one of my son's favorites. Starting from the preparation of a famous blogger I started to "put here, take away there" and in the end I did my own thing. But you know what? It is so good, simple and reassuring that it would have been a real injustice not to share it with you.
Ingredients
250 g flour250 ml fresh whole milk100 g sugar40 ml seed oil2 large eggs1 sachet of baking powder1 vial of almond flavoring450 g diced pears2 small pears to slice50 g chocolate chipssliced almonds
Procedure
Cut the pears into cubes and sprinkle with a little lemon juice to prevent them from browning. In another bowl, beat the eggs with the sugar. When you have obtained a light and frothy mixture, add oil and milk in a trickle, continuing to whip. Continue by combining the sifted flour with baking powder, mixing gently from the bottom to the top so as not to disassemble the mixture. Finally, pour in the pears cut into cubes and stir one last time. Transfer the dough into a 22-24 cm mold lined with parchment paper and decorate with the other 2 sliced pears, sliced almonds and chocolate chips. Sprinkle with brown sugar and bake in a static oven at 175°C for about 45 minutes. If the cake gets too dark, cover it with a sheet of aluminum foil. Let the pear cake with almonds and chocolate cool completely (if you have time wait until the next day, it will be even better) and then let's start tasting... ENJOY YOUR DESSERT!
