Lemon linguine with smoked salmon and basil oil 



A classic last-minute dish, a convenient dinner saver or a simple midnight "stopover" with friends are definitely spaghetti with garlic, oil and chili... but not for me! However, the fact remains that my dinner-saving options remain and among these there are certainly lemon linguine with smoked salmon and basil oil. It is a quick dish, delicious and also elegant... What more could you want? Well the process, that's what you want! So let's go, start boiling the water.

Ingredients

300 g linguine (or other long pasta)
100 g smoked salmon 
2 untreated lemons
1 knob of butter
extra virgin olive oil
basil oil 

Procedure

Boil the water and in the meantime heat the knob of butter in a pan with 3 tablespoons of extra virgin olive oil. When it is melted, add the grated lemon zest and let it brown for a couple of minutes over low heat. Now add the juice of the lemons and set aside. Cook the linguine in plenty of salted water. And when they are very al dente add them to the pan with the lemon sauce. Finish cooking by adding the water a little at a time and only if necessary. Serve the pasta by adding strips of smoked salmon with pepper and lemon and completing with drops of flavored oil.
