Bruschetta Caprese



Reusing leftover bread was a habit that dates back to when food was scarce on our tables and we were always looking for ideas to preserve it in the best possible way or give it a second life. This is the case of bruschetta. The bruschetta caprese is a typical Neapolitan delicacy, prepared with durum wheat bread cut into slices and toasted, on which, after being rubbed with garlic, pieces of buffalo mozzarella, cherry tomatoes, basil, oregano, salt and balsamic vinegar and extra virgin olive oil. Caprese bruschetta is an all-Mediterranean delicacy, which can serve as a hearty appetizer, but also as a fresh and quick main course.

INGREDIENTS

Cherry tomatoes 10
Basil 8 leaves
Extra virgin olive oil to taste
Fine salt to taste
Garlic 1 segment
Buffalo mozzarella 250 g
Homemade bread 4 Slices
Oregano 2 Pinches
Balsamic vinegar to taste

PREPARATION

To prepare the bruschetta caprese, cut 4 slices of bread about 2 cm thick, and toast them on both sides under the grill of the oven or on a non-stick pan. When they are golden, take every single slice of toasted bread and rub a clove of garlic on it (one should be enough for all 4 slices of bread). Once the slices of bread have been prepared, set them aside and prepare the ingredients you will need to season the caprese bruschetta. Drain the buffalo mozzarella well and cut it into squares that are not too large; Cut the cherry tomatoes into quarters. In a bowl, pour the mozzarella, tomatoes cut into quarters. Add the chopped basil with your fingers, oregano, extra virgin olive oil and a pinch of salt. Stir well, in order to blend the flavors. Place the toasted slices of bread on a serving plate and cover them with the mixture, divided for each slice in equal measure. Sprinkle the bruschetta with a little balsamic vinegar, extra virgin olive oil and serve.

Tip
It is advisable to eat freshly made.
