Shrimp fried rice

If you are on a diet, I recommend using 60 g of rice per person (instead of 80 g) for the preparation of the recipe, and to precede the dish with a large salad.
Ingredients
160 g basmati rice1 spring onion1 tablespoon extra virgin olive oil2 teaspoons soy sauce100 g peeled shrimp2 tbsp boiled peas1/2 teaspoon curry powderred chili pepper to taste
Preparation
Cook the rice al dente in plenty of lightly salted water, drain it and run it under cold water, then place it on a napkin to dry it well. Put the oil in a non-stick pan, add the finely chopped spring onion and sauté it. Now add the rice, stir with a wooden spoon and, when the rice starts to crackle, add the soy sauce. Stir and after a few minutes add the peeled prawns, pre-cooked peas, curry and chopped chili. Cook for another 5 minutes, stirring constantly, then serve hot. The recipe is ready!
