Roasted Oysters with Garlic Butter

Steps
To prepare the Grilled Oysters, prepare a large bowl, add ice and fill it with water. Take a tray and line it with salt or crushed ice. Take a kitchen towel and fold it in three for the long side, it will help you handle the oysters. Carefully clean the oysters and place them in the bowl with ice and water. Take an oyster and start looking at it carefully: on one side the shell is flatter, while on the other it forms a kind of belly. Place the part with the belly in contact with the cloth, while the smooth part must remain at the top. Cover the oyster with the tea towel, leaving visible only the part where the two shells meet. Insert the oyster knife into the slot and press lightly to separate the two shells. Wipe the knife on the towel and sever the oyster muscle to separate it from the top shell. At this point the shells can be separated completely. Cut the muscle completely and remove the upper shell. With the tip of the knife, thoroughly clean the oyster of any residue, also removing any pieces of shell that may have entered the shell during opening. Once cleaned, place the oyster in the tray with the salt (or crushed ice) being careful not to disperse the liquid contained in the shell. Repeat the previous steps until all the oysters are clean. Now proceed with the preparation of the flavored butter. Soften the butter, cut it into cubes and put it in the bowl of the mixer. Also add the chopped parsley, lemon juice and zest, minced garlic, salt and pepper. Turn on the mixer and work until you get a smooth and homogeneous cream. Place the oysters on the preheated grill so that they remain perfectly horizontal, fill them with a teaspoon of flavored butter and cook for about 2 minutes. When the butter is completely melted, remove the oysters from the grill and allow them to cool. Finally, serve the Grilled Oysters with the appropriate forks!
