Light piadina with olive oil
The light piadina with oil is a healthier and vegan version, a shell ready to accommodate many fillings from the most classic to the most exotic.... Everything varies according to your tastes, in representation of this preparation I show you my favorite with lettuce seasoned with extra virgin olive oil, salt and pepper, in addition ricotta cheese and smoked salmon in slice sliced by hand. 😋 Let's take a look at the ingredients and steps to make this piadina. To be eaten as soon as it is made, but if you want you can also store it in the refrigerator, in an airtight container, for a few days.
Ingredients
160 g re-milled durum wheat semolina
90 ml water
2 tbsp extra virgin olive oil
1 pinch salt
1 tsp Bicarbonate of soda
Steps
To prepare the light piadina with oil, mix the flour, salt, oil, baking soda and water in a planetary mixer or in a bowl with a wooden spoon. Knead until you get a smooth and homogeneous dough that should be divided into 4 loaves. Let the loaves rest for 30 minutes, covered with a cloth. Roll out each ball with a rolling pin, using the floured surface, obtaining a very thin layer of about 1/2 millimeter. Put them in a hot non-stick pan for 3 minutes on each side, you will see that several bubbles will form.
Place the wraps on a cloth and cover for 10 minutes, before filling them as you like.
