Creamy linguine with zucchini, anchovies and cherry tomatoes.
The ideal last-minute dish. There are days when the craving for a plate of pasta, my comfort food par excellence, is stronger than any motivation it can give me. You only need a few ingredients to make this cheap and tasty first course. A quick first course to prepare, but rich in flavor. Zucchini and anchovies are a winning combination, combined together with other ingredients, they form an amazing condiment. You can prepare the sauce in advance, or while the pasta is cooking.
Ingredients
160 gr of linguine
2 zucchini
4 anchovy fillets
1 clove of garlic
1 chili pepper
Extra virgin olive oil
4-5 cherry tomatoes
5 pitted olives
5 capers
grated pecorino cheese
Parsley
Procedure
To prepare linguine with zucchini, anchovies and cherry tomatoes, start by washing the zucchini, remove the two ends, and cut them into cubes. Put them in a large pan, together with the garlic clove and chili. Sauté for about five minutes, then remove the garlic clove and chili, and add the anchovy fillets, stir and let it flavor, then add the chopped olives and capers, stir, finally the cherry tomatoes cut into quarters and a couple of tablespoons of pasta cooking water. Pour the pasta al dente directly into the pan, stir and cook for a minute. Turn off the heat, add the grated pecorino cheese, mix well, serve, completing the dish with the chopped parsley. Fat-free, diet-free, and guilt-free 😍😍😍😍 eating.
