PIADINA WITH HERBS AND GORGONZOLA 🌮❤️ 



So much abundance in a single piadina, a dish with a strong character like the nature of the people of Romagna. Just like pizza, each of us has his or her favorite piadina, whether simple or particular. Ideal for a last-minute dinner with friends, but also as a special and delicious appetizer. In addition, piadina are also practical for preparing a tasty packed lunch to take on a trip or to the beach, or a complete snack for school. Appreciated by everyone, in fact, even the little ones, piadina will revolutionize your menu on several occasions. All you have to do is learn how to make them by hand and you will brighten up your kitchen!

INGREDIENTS

For the piadina 
500 g of flour 
1 teaspoon of salt
80 g of lard

For the filling
1500 g of herbs or chard
1 clove of garlic
200 g of Gorgonzola 
extra virgin olive oil
salt to taste

Preparation

For the dough: arrange the flour in a well, add salt and lard and as much water as needed to make the dough soft and elastic. Knead for a few minutes, then divide the dough into 6 equal parts and give each one a flattened circular shape. Let it rest for 30 minutes covered with a tea towel. Wash the chard thoroughly, sauté in a saucepan with the lid on. After about 5 minutes, drain and chop them. Fry the garlic in the oil, sauté the chard and season with salt, after 10 minutes add the Gorgonzola Dolce Igor cut into cubes and let it melt. Remove the garlic and let it cool. Roll out the dough with a rolling pin into very thin sheets, place on a hot plate and cook on both sides until golden. Cut the piadina in half and stuff them with the Gorgonzola and herbs. Enjoy your meal!
