Side dish of peppers and cherry tomatoes, a quick side dish prepared in a pan ideal to accompany meat. Ingredients for 2 people
1 yellow "square" pepper
1 red "square" pepper
1 green "square" pepper
6-7 cherry tomatoes
2 cloves of garlic
spicy oil or chili pepper
olive oil
1 pinch of salt
1/2 vegetable nut
fresh parsley
Preparation
For this recipe I used "square" peppers which are a variety of smaller, cube-shaped peppers, perfect for the spring and summer season. Wash the peppers and dry them well, remove the stem and any seeds left inside. Cut them into strips and, then, into small pieces. Put them in a pan together with a drizzle of olive oil, garlic and fry lightly. Stew them by adding water from time to time in order to cook well and be lighter than frying. Add salt and add the half nut that gives it a touch of extra flavor but if you want you can omit it. Continue cooking with a lid, add the chopped parsley and chilli (or spicy oil). Wash the cherry tomatoes and cut them into 4 lengthwise and add them to the pan. Cook until the peppers are soft and have thrown out the sauce together with the cherry tomatoes. The side dish of peppers and cherry tomatoes is ideal for lunch but in smaller quantities also for dinner, prepared in this way are easily digestible.
