Savory pie asparagus and speck petals

Ingredients

A pack of speck petals
1 roll of wholemeal puff pastry
200 g ricotta cheese
250 g asparagus
3 hard-boiled egg yolks
Extra virgin olive oil
salt & pepper

Procedure

Wear out the leathery part of the asparagus with the help of a potato peeler. Wash the asparagus and blanch them in boiling salted water for 5 minutes. Drain and sauté in a pan with a drizzle of extra virgin olive oil. After 5 minutes turn off the heat. Work the ricotta with salt and pepper. Roll out the wholemeal puff pastry in a baking tray lined with parchment paper. Add the ricotta and level it well with a spatula. Cover with sautéed asparagus. Bake at 180°C for 20 minutes. Take the savory pie out of the oven and decorate with tufts of ricotta, crumbled egg yolks and speck petals that you have previously browned in a non-stick pan.
