Sandwich with mortadella, sun-dried tomatoes, chicory and ginger oil
The perfect mix in the kitchen: mortadella and pistachios. Take the pistachios, anchovies and make a beaten with the two ingredients. Place them in a bowl and let the beaten flavor with the help of a couple of tablespoons of extra virgin olive oil. Heat the sandwich slightly so as to make it soft and crunchy at the same time. On the base of the bread arrange a generous layer of burrata, add the chopped anchovies and pistachio and finish with 4 slices of mortadella. Close the sandwich and enjoy it. After all, everyone knows that the perfect combination is the one that sees the mortadella and the pistachio within the same recipe; Obviously, if anchovy and burrata also accompany them, the result can only be incomparable and surprising: try it to believe it!
Ingredients
4 sandwiches
200g mortadella
1 romaine lettuce
60g extra virgin olive oil to taste
salt and pepper to taste
For the ginger mayonnaise
1 egg yolk
fresh ginger to taste
200g sunflower oil
salt and pepper to taste
Procedure
First we prepare ginger mayonnaise. Grate the ginger (at least 1 cm inside the glass of an immersion mixer), add an egg yolk and a pinch of salt and pepper. Add a small part of the oil and start blending with the immersion mixer. Gradually add the remaining part of the oil. Now put a pan with extra virgin olive oil on the heat and season the lettuce with salt, pepper and oil. When the pan is hot, blanch the romaine lettuce, leaving the heart crispy. Mount the sandwich with 1/4 lettuce, slices of mortadella, and ginger mayonnaise. Enjoy it now! That's a sandwich!
