Peppers and tomatoes
The right dish for... a homemade side dish! Peppers and tomatoes, simple dish maybe even trivial, perhaps obvious but this is what I bring to the table today and if the blog is a diary, my diary then I can not help but bring on the blog what will be my outline today and if, after a succulent shoe, Two peppers remain tomorrow I make a nice omelette as the Calabrian tradition wants.
Side dish of peppers and cherry tomatoes, a quick side dish prepared in a pan ideal to accompany meat. The recipe is very simple, just a few ingredients are enough for a really tasty side dish, with fresh cherry tomatoes and colored, yellow, red and green peppers. The peppers are not roasted but cooked directly in the pan, to speed up cooking times. Vegetarian and tasty recipe.
Ingredients
a red pepper
a yellow pepper
two large red cluster tomatoes
100 ml tomato puree
salt
extra virgin olive oil
fresh basil
Guidelines
Wash the tomatoes and cut the cross peel, drop into boiling water for a couple of minutes, drain and peel easily thanks to the cut made previously. We also remove the seeds and cut into fillets. We clean the peppers removing seeds and white filaments, cut into fillets. In a pan we put the extra virgin olive oil and let it heat slightly, add the peppers, brown and insert the tomato fillets, let go and also add the tomato puree, two basil leaves and salt, let it cook for about 40 minutes, the peppers must remain whole. We serve hot or at room temperature as I like them. I recommend enjoying them as a side dish, to season a frisa or to stuff a sandwich maybe still hot. With the sauce you can season the pasta and with the peppers make an omelette as the oldest Calabrian tradition wants!
