Linguini fini with sardines and cherry peppers
Seasonal dish, simple cheap and delicious these linguini with sardines and peppers. The taste of the sardines is deliciously accompanied by the scent of peppers. Making this delicious dish, typical of the culinary tradition of southern Italy, is extremely simple and quite fast. It is also a very cheap dish, which you never regret. You can consider it a single dish, at the same time you will bring to the table first and second.
Ingredients
350 gr.of linguini or other type of long pasta
400 gr. of clean sardines or anchovies
400 gr. of ripe cherry tomatoes
1 tablespoon desalted capers
1 fleshy red pepper
1 clove of garlic
basil a few sprigs
extra virgin olive oil to taste
salt and black pepper
Procedure
Start by heating the oil with the chopped garlic in a large non-stick pan, it must be large enough to subsequently contain the dough, as soon as the garlic takes color, but be careful not to burn it, otherwise it will give a bad taste to the whole dish, add the pepper thinly cut into julienne, fry for a few minutes and then insert the ripe tomatoes cut into small pieces and the chopped capers that you have left desalt under running water for at least thirty minutes. Add salt, pepper and as soon as it boils add the sardines or anchovies clean, but leave with the bone. Complete the cooking, which will be short, about fifteen minutes, and just before turning off the stove add a few leaves of chopped basil. Meanwhile, boil the spaghetti in salted water, drain them al dente and add them to the sauce in a pan, after you have removed the sardines. Sauté the pasta for a few more minutes to complete cooking and then serve it accompanied by sardines and a few basil leaves.
