INGREDIENTS dose for 6 people
100 gr of dry biscuits
100 gr of R icotta
250 gr of Mascarpone
80 gr melted butter
2 tablespoons icing sugar
400 gr strawberries
1 tablespoon caster sugar
Preparation
To prepare this semifreddo you start by going to wash and then cut the strawberries into small pieces, leave some for the final decoration. The washed and cut strawberries are put in a saucepan with granulated sugar and cooked, over low heat, until they have become soft. At this point it is removed from the heat and allowed to cool. Meanwhile, finely chop the biscuits and mix them with melted butter. Cover with plastic wrap a cake mold not too large and pour into the mixture of biscuits and butter. Level well and refrigerate. Then you go to whip the ricotta with mascarpone and sifted icing sugar until you get a cream. To the mixture add the strawberries with the sugar now cold and after mixing well pour everything on the basis of biscuits and butter. Level with a spatula or with the back of a spoon and put in the freezer, until it has solidified well, better a whole night. Once ready to serve, remove from the freezer 10 minutes before and decorate with fresh strawberries cut into pieces and icing sugar.
