Soup with flat green beans



The best weather for green beans is between July and August, but you can also find good ones in September. Choose the smallest and less hard and clean them as usual. This recipe is a soup and is always good both in summer and winter. The fresh tomato San Marzano makes a great result, but in winter are also good peeled tomatoes and green beans (who likes them) frozen good quality. The green bean soup is a nutritious dish, prepared with simple and genuine ingredients. 

Ingredients 

Green beans kg 1
Fresh tomatoes gr 350 
Garlic 1 clove
Extra virgin olive oil gr 80
Basil, salt, water to taste

Procedure

Boil the peeled green beans without covering in salted water.
Remove at 3/4 time of cooking. Brown the garlic in the oil and remove it. Add the tomatoes, basil and let it wither. Add the boiled green beans, a ladle of fresh water and cook for about twenty minutes or as much as you like the yield of the vegetables. Season with salt. In the traditional recipe it is well cooked, almost flaking and a nice brodetto remains. In the dish it should be accompanied by a drizzle of oil, fresh basil. And a good bread of course.
