Angel hair pasta with meatballs 




Angel hair pasta with meatballs is a rich and hearty first course that for this reason is considered an appetizing single dish. A recipe that appeals to everyone, even Lilli and the Tramp who in the famous Disney film enjoy them under a starry sky, exchanging a romantic kiss. Not only in movies, but also in reality, this recipe whets the appetite of adults and children, who would never be satisfied. Made with tomato sauce and enriched with soft and succulent meatballs flavored with nutmeg, Angel hair pasta with meatballs are an appetizing and easy to prepare dish that you can enjoy for a romantic evening or for a dinner with friends!

INGREDIENTS

Angel hair pasta 320 g
Tomato puree 700 g
Shallots 20 g
Garlic 1 segment
Extra virgin olive oil 30 g
Salt to taste

FOR 42 MEATBALLS

Minced pork 100 g
Luganega 100 g
Mortadella in a single slice 80 g
Wholemeal bread only the crumb 50 g
Parmigiano Reggiano 50 g
Chopped parsley 5 g
Eggs (about 1 medium) 60 g
Nutmeg to taste
Black pepper to taste
Salt to taste

PREPARATION

First start making the sauce. Finely chop the shallot, and put it to fry over low heat, then peel the garlic, and fry it together with the shallot, for at least 6-7 minutes. Then pour the tomato puree, add salt, pepper and cook for at least 40 minutes covered. While the sauce is cooking, move on to the preparation of the meatballs: take the stale wholemeal bread without crusts, and blend it in a mixer together with the mortadella. Then take the sausage and cut the casing with a sharp blade knife to eliminate it: then chop it. Chop the parsley finely. In a large bowl pour the minced pork, bread crumbs with mortadella, the sausage and parsley. Then season with salt and pepper. Flavored with grated nutmeg, add the egg and grated cheese. And now knead with your hands until all the ingredients are well blended. Cover and let stand for about 15 minutes in the fridge. Then take the dough of meatballs, and form balls of 10 grams each until the dough is finished: This way you will get 42. When the sauce is ready, remove the garlic and pour the meatballs gently into the sauce. Cook for another 30 minutes over low heat. Finally, bring the water to a boil, add salt and pour the pasta, then drain it al dente and finish cooking with the sauce. And here are your Angel hair with meatballs.

PRESERVATION
It is preferable to consume Angel hair with freshly prepared meatballs. The sauce with meatballs can be kept in the fridge for 2-3 days.

NOTE
If you want you can prepare the day before the sauce with meatballs so that the flavors blend better!
