The secret to a soft and non-dry meat, in fact, lies in respecting the cooking times. Before removing the pan from the oven, however, make sure that the chicken is well cooked: the internal temperature of the thigh must be about 72 ° C; In case you do not have a kitchen thermometer, skewer the meat with a wooden toothpick and check that no pink liquid comes out.

For a tasty dish, prefer a free-range chicken and yellow or new potatoes. You can customize the recipe using other parts of the chicken, herbs or replacing the potato side dish with one based on vegetables such as peppers or onions. 

INGREDIENTS

1 chicken thigh per head
1 or 2 medium potatoes per person
1 clove of garlic
olive oil
rosemary
white wine

Preparation

First we take the thighs and put them to macerate for half an hour, for maceration we use: 1 tablespoon of white wine for each thigh, a teaspoon of oil, salt and a sprig of chopped rosemary. Meanwhile, wash, peel and cut the potatoes into more or less equal pieces to ensure uniform cooking. Season the potatoes in a bowl with oil, salt, garlic and rosemary, pour them into a baking dish, covered with baking paper, add the thighs with the part of the skin facing up.
