PASTA WITH EGGPLANT




To prepare a dish with a delicious flavor and decidedly warm colors, I recommend pasta with eggplant. It brings together the whole family, can be prepared in a thousand different ways and does not require too long a time for its realization. Eggplant is a vegetable that goes well with everything: from tomatoes to vegetables, from meat to fish ... That's why I have collected for you some ideas on how to prepare eggplant pasta with delicious variations! 

The recipe that you will read below is one of the most popular of the summer and includes a sauce with fried eggplant characterized by peeled tomatoes cut, just as the Sicilian tradition wants. But this is a first course that lends itself to many interpretations: pasta with eggplant is also tasty in white with a sprinkling of pecorino cheese or with a handful of stringy mozzarella that melts in your mouth. Who said you can only do it in a pan?

INGREDIENTS

PASTA TYPE PENNE OR FUSILLI 400 gr
PEELED TOMATOES 2 jars
MEDIUM EGGPLANTS 3
FRESH BASIL
GRATED PECORINO CHEESE
MOZZARELLA 200 gr
GARLIC 1 clove
EXTRA VIRGIN OLIVE OIL
SEED OIL
SALT
CHILI PEPPER

PREPARATION

Cut the aubergines into cubes and soak them in water and salt for at least half an hour. Squeeze them to remove all absorbed water. Fry the aubergines in plenty of boiling seed oil. When they are golden brown: remove them from the pan with a slotted spoon and let them cool on a sheet of absorbent paper to remove excess oil. In a large pan brown a clove of garlic, then add the peeled tomatoes cut into small pieces, salt, add the chilli and remove the garlic. Cook the tomatoes for about a quarter of an hour, then add the aubergines and fresh basil. Boil the pasta in salted water, drain it al dente and season with the prepared sauce. Add the diced mozzarella and sprinkle with pecorino cheese.

Idea
With eggplant you can indulge in the kitchen: you can prepare tasty and easy to make first courses. If you want to bring to the table a pasta dish with eggplant rich in taste, and different from the original Sicilian recipe, just remove the tomatoes for example and prepare the alternative in white, or, mix everything and finish cooking in the oven. To complete the dish, you could add swordfish or crumbled sausage; Another variant of the recipe involves the combination with other types of vegetables, such as delicate zucchini.
