Bresaola, rocket, parmigiano…and a fresh mozzarella  ❤️




Bresaola, rocket and parmesan is a tasty, fresh and light appetizer that is prepared in a few minutes. We can serve this salad both as an appetizer and as a side dish. Despite being a very simple dish to make, it will still be effective and above all it is tasty, genuine and perfect for everyone. Bresaola rocket and mozzarella, in winter version for an appetizer to share or a single dish even for those on a diet. A quick, fresh, light dish, with the addition of coloured tomatoes, olives and a little parmesan shavings that makes our bresaola with rocket and mozzarella special. A perfect dish for a quick dinner at the last minute, for a light lunch to be consumed even in the office, or more simply a snack out of hours for those who return late, in short, it is always good, and it is a goodness in total lightness.

Bresaola rocket and parmesan is a classic combination of Italian cuisine, fresh, light and ideal for the warm weather, when you do not really want to get in the kitchen but you do not want to give up taste. It can be served either as an appetizer, placed in the center of the table, as a main course or as a second course, if prepared in larger quantities, the only precautions to follow are only those not to abound with rocket that otherwise will completely cover the flavor of the other ingredients and not to put only lemon juice on the bresaola, but to make a light emulsion of lemon juice with extra virgin olive oil and the addition of salt and ground pepper, otherwise the bresaola would blacken! Bresaola is a cured meat with a protected geographical indication (PGI), obtained from salted and seasoned beef, which is eaten raw. It is very digestible and low in fat, therefore suitable for those who are following a low-calorie diet. It is also rich in iron, minerals and vitamins. It is an excellent source of protein, iron, zinc, vitamin B2 and niacin and is low in fat and calories.

Ingredients

2 packs of sliced bresaola
Half a lemon
500 grams of fresh rocket 
Extra virgin olive oil
Cherry tomatoes to taste
Olives to taste
Fresh mozzarella
Parmesan flakes
Salt
Pepper

Procedure

Roll out the slices of bresaola in individual dishes. Meanwhile, squeeze the lemon juice in a small bowl and remove the seeds, also adding extra virgin olive oil. Mix the sauce well and sprinkle it on the slices of bresaola with the help of a kitchen brush. Pepper the slices of bresaola and put on it fresh rocket, freshly washed and dried. From the slice of fresh Parmesan cheese cut large enough flakes and distribute them on the rocket with the cherry tomatoes and olives. Lightly salt your dish of carpaccio of bresaola, rocket and parmesan cheese and fresh mozzarella, adding if you like, another drizzle of lemon emulsified with extra virgin olive oil.
