Napoleon or eggplant millefeuille alla caprese
I always try to make them differently trying to make them appetizing and this millefeuille of eggplant caprese satisfies me! The millefeuille of eggplant caprese is a simple dish and wanting to make it lighter eggplant can be grilled, I fry them, I drained them quite a bit and I did not add other fats.
Ingredients

A slice of eggplant, one of salted tomato, a slice of mozzarella and a basil leaf and only if you want grilled sliced mushrooms and so on. It can be served as an appetizer or salad or as a vegetarian second course.
