Lemony salmon

Ingredients

3 slices Fresh salmon (200 gr)
2 cloves Garlic
1 organic lemon (zest and juice)
1 tablespoon Flour
1 sprig Parsley
White wine (to taste)
Butter
Salt and pepper
Extra virgin olive oil

Preparation

Rinse the fish, dry it with absorbent paper. Wash and chop the parsley, also wash the lemon, peel the garlic cloves. Grate the lemon peel, squeeze the juice to which you will add the parsley, garlic, grated zest, a pinch of salt and pepper. Set aside. In a pan place the other clove of garlic, a knob of butter and a little' extra virgin olive oil heat then arrange the slices of salmon in the pan. Cook a few minutes on each side, blend with a little white wine then add the lemon juice with the smells. Continue cooking for another 5 minutes although the time may vary depending on the thickness of the fish. Gently take the lemon salmon slices with a slotted spoon, place them on a plate. Narrow the cooking stock by adding a tablespoon of flour diluted in a little water. When it has reached a creamy consistency, put the fish back in the pan for a few seconds. Serve quickly and decorate with more chopped parsley.
