Cavatelli with Bolognese Sauce




Cavatelli with meat sauce are an easy to make pasta dish that you can prepare for a family lunch or dinner with friends. Cavatelli with meat sauce are a first course of the Italian tradition really super tasty! Easy to prepare, this Pasta with Meat Sauce is perfect to serve for a lunch with the whole family or during a dinner with friends. My advice is to make these Cavatelli with Meat Sauce even tastier by making both the Ragù and the Cavatelli at home. And if the process seems long, no problem: you can make both in advance, so you can then prepare the Cavatelli with Ragù quickly and easily!

Ingredients for 4 people

400 g Cavatelli
400 ml of tomato puree
350 g minced meat
250 ml of Water
200 ml Red Wine
100 ml milk
60 ml Extra Virgin Olive Oil
1 Carrot
1 onion
1 stalk of celery
grated Parmigiano Reggiano to taste
to taste of Fine Salt

Procedure

To prepare the Cavatelli with Meat Sauce, start by washing, cleaning and finely chopping the celery, onion and carrot. Pour the extra virgin olive oil into a large pot and fry the chopped vegetables for a few minutes. Add the ground meat previously crumbled with your hands, stir to distribute evenly and cook for about 5 minutes. Deglaze with the red wine and let it evaporate completely. Pour the tomato puree, season with salt, add water and mix. Lower the heat to a minimum and cook for about 3 hours, stirring occasionally to mix the ingredients. After the cooking time, pour the milk into the pot, stir again to mix and cook for another 30 minutes. Once the sauce is cooked, turn off the heat, cover with a lid and let it rest. Meanwhile, cook the cavatelli in salted water. Drain the cavatelli still al dente and add them to the pot with the sauce. Cook for a few minutes over low heat, sprinkle with grated parmesan cheese to taste and serve the Cavatelli with meat sauce!
