Timpano (timballo or timbale)📍Italy
Timpano, also known as timballo or timbale, is perhaps the most impressive, elusive pasta dish there is. A timpano is essentially a giant, drum-shaped (as in timpani drums!) pie crust filled with all of the most amazing Italian ingredients you can imagine: everything from pasta and cheese to meatballs and sausage. Timpano was the starring dish in the 1996 film "The Big Night", and based on a family recipe of co-star, co-writer, and co-director Stanley Tucci.
The Spaghetti Timballo is a rich and unique dish to serve as a quick lunch or to take with you for a packed lunch, trips out of town or, cut into mini portions, in the office, at school, at work etc...
The spaghetti timbale is made with eggs, speck and stringy cheese that are mixed and used to enrich a simple cooked pasta, bake and you're done!
Ingredients
300 gr of spaghetti already cooked
5 eggs
30 g butter
50 g speck in thin strips
150 g fiordilatte mozzarella
cheese 3 tablespoons grated Parmesan cheese
salt to taste
pepper
Preparation
You can use leftover spaghetti. Melt the butter in a pan, add the spaghetti and speck, browning well. In a bowl with high edges beat the eggs, salt and pepper then add the grated cheese and finally the cold spaghetti. Then add the fiordilatte mozzarella cut into cubes and mix everything. In a baking dish, round, roll out baking paper shaped according to the shape of the pan, pour the prepared mixture, bake at 180 ° C for about 20min until a nice golden crust is formed Serve freshly baked.

Tasting note
Deep ruby read in appearance. Nose is of mild red fruit and slight spice. Dry but not overly so. Medium bodied wine that is red fruit forward: cherry, raspberry, and vanilla. Medium plus on the acidity with mild tannins and a short finish. Not overly complex. If you like cherries, you will like this one.
