Pizza with mozzarella prosciutto ricotta and rosemary



Pizza a dish of Italian origin consisting of a flat, round base of dough baked with a topping of tomato sauce and cheese, typically with added meat or vegetables. The preparation of this pizza is very simple, and should be prepared with a well-hydrated dough and with a maturation of at least 24 hours. The ingredients I used are simple but rich in taste, these are cherry tomatoes ripe and sweet at the right point, fresh ricotta, mozzarella and a few slices of raw prosciutto. 

Let's start with a good drafting by hand, avoiding the rolling pin or other primitive tools that can compromise the final result of our pizza.  After the laying phase, add the tomato with the help of a spoon, mozzarella, cherry tomatoes cut into wedges and well seasoned, fresh ricotta and immediately put the pizza in the hot oven. In my wood-fired oven the pizza took just over a minute to reach the perfect browning and then was immediately baked. At this point all that remains are to be added the prosciutto, a few leaves of fresh basil and rosemary and the pizza is ready to be served at the table.
