Linguine with prawns

A delicious dish, which will also appeal to children. Suitable in particular for festive lunch, but nothing prevents us from preparing it even on weekdays.
One of the most prepared first courses of fish is undoubtedly the one with shrimps. Cooked in white or with cherry tomatoes, they are appreciated by everyone, both to those who love the delights of the sea, and to those who are slowly approaching the world of shellfish. Often vegetables and mushrooms are added to this seafood dish to enhance its flavor even more. Let's see what ingredients we need to prepare it.
Ingredients
2 tablespoons toasted pistachios320 g linguine200 g red tomatoesPepperextra virgin olive oil1 clove of garlic300 g pink shrimp tails2 tablespoons vodka150 g shrimpfresh parsleysalt
Procedure
We begin to shell and wash the shrimp tails, also eliminating the gut. Separately, in a pan, brown the garlic and, when it is ready, add the shrimp and shrimp tails cleaned first. We cook for 2 minutes and deglaze with vodka. When they are cooked, we remove from heat. Remove the shrimp and shrimp from the pan and place them in a bowl. Remove the garlic from the pan and, in the same where we cooked the fish, add the tomatoes and cook over high heat for 4 minutes. Then add salt and cook for another 2 minutes. Then put the fish back in the pan, together with the tomatoes, add the chopped parsley and salt. We stir and cook for 1 minute. Then we cover with a lid and let it rest. n the meantime, cook our pasta and, when it is al dente, drain it and add it to the pan with the sauce and a little cooking water. We also add the pistachios and stir quickly. In this recipe I used linguine but you can choose any shape of pasta you prefer, but I advise you to opt for a long pasta. Let's plate them, adding more chopped parsley and a drizzle of oil and a little pepper.
