Steaming perforated fresh macaroni with tomato and pan-toasted breadcrumbs



The pasta with cherry tomatoes and crispy breadcrumbs is a simple dish that is really prepared in a few minutes! Ideal when you have little time to prepare lunch or dinner, this pasta is easy and tasty! Pan-roasted breadcrumbs is a common ingredient in many Sicilian recipes and makes pasta with cherry tomatoes and crispy crumbs a unique and delicious goodness! For the recipe I used a few ingredients such as onion, capers and cherry tomatoes, but you can also enrich your pasta by adding a little black olives, some anchovy fillets or tuna and if you like even a pinch of chili!
And now I leave you the recipe!

Ingredients

160 g pasta
400 g  tomatoes (or cherry tomatoes)
1 tablespoon salted capers
1 bay leaf
1white onion (small)
40 g breadcrumbs 
extra virgin olive oil
salt
4 basil leaves

Preparation

First soak the capers in hot water for 10 minutes. Wash the cherry tomatoes, dry them and cut them into four parts. Cut a small onion into very thin slices. Heat 4 tablespoons of extra virgin olive oil in a non-stick pan. Add the onion in a pan and let it stew gently for 4 or 5 minutes with the bay leaf. Add the chopped cherry tomatoes, turn up the heat, season with salt and cook for 8 – 10 minutes. Now remove the bay leaf, add the squeezed capers, stir and leave to flavor for 2 minutes. Turn off the heat and heat the water for cooking the pasta.
Meanwhile, chop the crumbs in the mixer, or use the breadcrumbs and toast it with 2 tablespoons of extra virgin olive oil in a pan. When the crumb is crispy, turn off the heat. Boil the pasta, drain it al dente, pour it into the pan with the cherry tomatoes and sauté for a few seconds.
Distribute the pasta on the plates and complete with the toasted crumb. Your pasta with cherry tomatoes and crispy crumb is ready! Enjoy your meal!
