Italian Omelet (frittata)



The omelet is a dish of the Italian culinary tradition based on eggs to which different types of ingredients can be added. The Frittata is a traditional Italian dish whose main ingredient is eggs. Unlike the Omelet must be cooked on both sides and can be eaten as a main course or as a side dish. The base of the omelet consists of beaten eggs to which different ingredients are added such as cheese, ham, pasta, vegetables, milk or breadcrumbs all flavored with salt and pepper. 

As we said before, the omelet should traditionally be cooked in a pan making it "sauté" in such a way as to cook both sides. In recent years, however, the practice of making the Baked Omelet has become widespread, that is, cook the dough in a non-stick pan in the oven which allows uniform cooking and above all a strong reduction of fat, not needing to use oil. Starting from the Omelet you can also make a tasty Omelet Roll which is a real cross between ''Frittata all'Italiana'' and the French Omelet. Let's find out now how to make the Traditional Omelet but also Special Omelet that see the use of ingredients sometimes considered unusual.

Spinach Omelet is a simple dish, but really tasty. Easy and quick to do, it is perfect for a picnic, but also as an appetizer. 

Ingredients for 2 people

150 g spinach
4 Eggs
50 g of Parmigiano Reggiano
salt to taste
Pepe to taste
Extra Virgin Olive Oil to taste

Procedure

To prepare the Spinach Omelet start by cleaning and washing the spinach very well. Drain then cook them in a pan with the lid together with a little oil for about 7 minutes. When they are cooked, turn off the gas and let them cool. Meanwhile, grate the Parmesan. Then take a medium-sized bowl and put the eggs, Parmesan, salt and pepper in it. Mix well until the ingredients mix well and then add the spinach completely cold, then mix again. Take a non-stick pan and pour a drizzle of oil. When the oil is hot, pour the previous mixture and cook over low heat for about 3 minutes then, using a lid or a plate, turn the omelet and cook for another 3 minutes on the other side. Serve the Spinach Omelet hot, warm or cold.

Variants and Alternatives
To make the Spinach Omelet even tastier you can add cubes of mozzarella to the mixture before cooking it.

Before turning the Spinach Omelet check that it is cooked. To help you you can use a kitchen scoop, but be careful not to break the omelet.

Preservation
The Spinach Omelet can be kept in the refrigerator in an airtight container or covered with plastic wrap for about a day.
