Stuffed Eggplant

In addition, not having to fry the eggplants there is no doubt that you will get a light appetizer, which will also allow those who are following a diet to give a tasty portion. Undoubtedly, once you have tasted this roll you will not be able to do without it anymore and you will want to do it often, because such a full and intense flavor is actually not easily forgotten. So, the fact that its preparation is very simple and rather fast is a small advantage, which will allow you to enjoy it when you like.
Ingredients
200 ml tomato pulp
150 gr of sliced cooked prosciutto
80 gr of grated parmesan cheese
2 eggplant
1 garlic clove, chopped
1 tablespoon olive oil
1 tablespoon breadcrumbs
1 tablespoon grated Parmesan cheese
basil to taste
salt and pepper to taste
Preparation
First wash the eggplants, dry them, remove the hat and cut them into slices (long) about 1 cm thick. Now line a baking tray with baking paper, oil it slightly, place the eggplants in them (overlapping them), drizzle with a little oil and bake for 25 minutes at a temperature of 200 ° C. Meanwhile, pour the tomato sauce into a small bowl, adding garlic, salt, pepper, basil and a drizzle of oil, then mix everything properly with a spoon. Now take the eggplants out of the oven, season with the tomato sauce, ham and cheese, then helping yourself with baking paper, roll them up on themselves gently. Once this is done, brush the surface with more tomato sauce, sprinkle with breadcrumbs and Parmesan, then place in the pan. Finally, bake in a preheated oven for 10-15 minutes at a temperature of 190°C. Once the roll is ready, before serving, garnish it with a few basil leaves on the surface and bring to the table cut into slices.
Tip
This dish can be served both as an appetizer, but can also be a complete second course with only 180 calories per slice. Even the presentation of this recipe is really perfect. Of course for the filling you can vary and choose what you like best. Always prefer a light filling!
