Red mullet and green beans



Most of the time Friday for me is a day at sea in the sense that fish is almost always prepared. Green beans are crunchy and tasty vegetables that we can find fresh even at this time of year at Costco. They are excellent to be enjoyed alone, or as a side dish to combine with meat or fish dishes: boiled or stewed green beans, au gratin, or combined with potatoes, octopus or pasta. The recipes to prepare with green beans are many, fast and tasty, also ideal for those who follow a vegetarian diet. 

Baked mullet with oregano is a tasty dish that also combines lightness; They are very simple to prepare as well as extremely fast. Red mullet is a very popular fish for white meat and very tasty and nutritious. In the kitchen they are versatile, they are often stewed, used to give flavor to fish soups and stews but fried mullets or baked mullets like the ones I present in this recipe are also amazing!

I am sure that the Mediterranean and light flavor these baked mullets with oregano will not only conquer lovers of seafood but also those who are always looking for light and tasty recipes to bring to the table all year round! The red mullet is a marine bony fish characterized by lean, nutritious and highly digestible meats, it is pleasantly used and appreciated in the kitchen for frying.

Ingredients

8 mullet
1 lemon
1 bunch oregano
0.5 cup extra virgin olive oil
salt to taste

Preparation

Gently scale 8 mullets, then remove the fins, heads and entrails, wash and dry them, dabbing them with a sheet of kitchen paper towels.
Clean, wash and finely chop 1 bunch of oregano (preferably with a sharp knife). Grease with 3 tablespoons of extra virgin olive oil a round and low baking pan, arrange the mullet well combined radially with the tail facing the center. Sprinkle the fish with the juice of 1 lemon, sprinkle with the chopped oregano prepared previously, salt them and sprinkle with the remaining extra virgin olive oil. Cook the fish in a hot oven at 180° C for about 15 minutes. Take it out of the oven, place the baked mullets with oregano on a serving plate and serve them immediately drizzled with the cooking sauce. The delicate flavor of mullet that goes perfectly with oregano and lemon and their pink color gives a pinch of joy to the dish. Serve with green beans.
