FLAVOR
It shows lovely mid-palate depth in a medium-bodied, sleek style supported by firm yet well-integrated tannins.

There are a ton of different ways to cook a tasty veal dish; sautéing, broiling, grilling, braising, and including it in a stew come to mind. The best wine pairing will take the different methods to cooking veal into account in order to come up with the best way to bring out the ingredients used in the preparation of the dish. The wine will seek to complement its flavor and texture rather than overpower it. When trying to pair wine with veal dishes, consider the cut as well as the way it's cooked. The full flavor profile of the dish should be able to tell you where to start; ask yourself if the flavor profile is strong or subtle and then match it appropriately with a strong or subtle wine. 

Roasted veal shank



Ingredients

Pepper to taste

meat broth to taste
carrot to taste
parsley to taste
celery to taste
butter to taste
olive oil to taste
salt to taste
white wine to taste
onion to taste
calf shank to taste
mixed aromas to taste

Preparation

Not just ossibuchi! In fact, the whole shank provides another excellent dish which is the so-called "shank" roast. Its preparation is quite similar to that of a common roast made in the oven: it is put in an oval baking dish, with oil and butter, various aromas, salt and pepper; It is browned in a hot oven at about 200 °C and sprinkled with white wine first and then with broth, cooking it for about 2 and a half hours. It is then served in long slices, cut with a knife (as is done for raw prosciutto). There is also a tasty variant that provides, after browning, the addition of a hearty chopped carrot, celery, onion, garlic, parsley, distributed on the meat, then proceeding in cooking as indicated. Once this is completed, the bottom is blended over it and poured over the sliced meat.

Experts think this Tuscan Red wine would be a match made in heaven with this dish.
