Pizza with Mozzarella, Zucchini, Eggplant & Roasted Peppers

Practically a ratatouille in a pizza, what's better than many fresh vegetables even on pizza? Many good and healthy colored vegetables that cheer the table and the senses! I tried to "arrange" them on a vegetarian pizza, since pizza is everyone's favorite food and I must say that the result was really pleasant and surprising. A perfect pizza even for those on a diet to be enjoyed without too much guilt!
Ingredients
1 kg pizza dough
1 red bell pepper
1 Yellow bell pepper
2 Zucchini
1 Round eggplant
1 onion
salt and pepper to taste
2 tablespoons grated cheese
Breadcrumbs to taste
400 g Mozzarella
500 g Peeled tomatoes
Extra virgin olive oil to taste
Oregano to taste
Preparation
Prepare the pizza dough with the recipe you prefer. Meanwhile, prepare the vegetable ratatouille. Clean the peppers, zucchini and eggplant, then cut everything into small pieces. Also cut the onion into thin slices and stew it with a few tablespoons of oil in a large pan. Add the rest of the vegetables, then salt and pepper lightly and finally cover. Cook over high heat for about ten minutes, stirring occasionally. Turn off and let cool. Roll out the pizza dough in the tray lightly greased with oil. In a bowl crush the peeled tomatoes or blend them quickly, then season with oil, salt and a pinch of oregano, finally sprinkle the pizza with peeled tomatoes. Finely chop the mozzarella and add it to the cold vegetables. Add a little grated cheese and two / three tablespoons of breadcrumbs. Mix everything and cover the pizzas with vegetables. Bake at 250 °C leaving to cook 10 minutes in the lower part and another 10 minutes in the upper part of the oven. The timing will depend on the power of your oven, so adjust accordingly.
Remove from the oven and serve.
