Tiramisù with lemon




When you want to delight your guests with a tasty, fresh, but also not excessively heavy dessert, you can try the Lemon Tiramisù, a very appetizing spoon dessert. The lemon tiramisù, perhaps, will not be as famous as the classic one but especially in summer it is a fresh, light and above all ideal variant to be enjoyed at the end of a dinner. In this recipe the ladyfingers, instead of being soaked in coffee as happens in the classic tiramisù, are passed in an alcoholic wet composed of Limoncello, water and sugar. Even the mascarpone cream has an intense lemon scent since it is mixed with the juice of 2 lemons and the grated rind of half a lemon. The preparation of lemon tiramisù is quick and easy and, in a few minutes, will allow you to bring to the table a creamy dessert with a delicate flavor.

Ingredients
For a baking tray having the dimensions of about 25 x 19 centimeters.
350 g ladyfingers
500 g mascarpone
3 Eggs
2 lemons
180 g Sugar
60 ml Limoncello
250 ml Water

Preparation
Prepare the syrup for the lemon tiramisù where you are going to flavor the ladyfingers by putting in a saucepan 250 milliliters of warm water with limoncello and 60 grams of sugar; Then, with a spoon mix everything well until the sugar has dissolved completely. With a spoon mix everything well until the sugar has dissolved completely; At this point, the lemon syrup will be ready. Separate the egg yolks from the whites and beat the egg whites until stiff with an electric mixer. In a second bowl, work the egg yolks with the remaining sugar. 

Add to the egg yolks and sugar also the mascarpone, the juice of the two lemons and the zest of half a grated lemon, then mix everything homogeneously with the whisk or with the electric mixer at medium speed. Add the mixture of egg yolks and mascarpone to the whipped egg whites and mix the various ingredients together with a whisk, stirring from bottom to top to avoid disassembling the egg whites. 

Pour into a basin the syrup that you had prepared previously and soak for a few moments the ladyfingers one at a time. Start placing the ladyfingers on the bottom of a baking dish as you soak them in the wet. Form a layer of ladyfingers and then cover them with a layer of mascarpone and lemon cream. Repeat the operation with a second layer of ladyfingers and then with a second layer of cream. Sprinkle the surface of the lemon tiramisù with a sprinkling of grated lemon zest and then the dessert will be ready to be served on the table, after resting for at least an hour in the refrigerator.
