Spiced Ribs with Potatoes
I love ribs, they are very tasty and easy to prepare. A succulent second course, one of those that you forget about at the table and enjoy with your hands, until the last piece of meat!
The baked ribs will conquer you with their softness and their flavor, thanks to the slow cooking in the oven, together with the potatoes. After preparing them with BBQ sauce, grilled potatoes in a pan, we chose to cook them in a simple way flavoring the ribs with rosemary and paprika. You can choose your favorite aromas to give even more taste to these tasty ribs. Perfect for a Sunday lunch in winter, simple to prepare and delicious, baked ribs are an ever-winning classic!
INGREDIENTSPork ribs 1 KgNew potatoes 1 KgRosemary 1 sprigGarlic 2 ClovesPaprika 1 teaspoonSalt to tasteBlack pepper to tasteExtra virgin olive oil to taste
PREPARATIONTo prepare the baked ribs start from the potatoes: wash them well. Cut into wedges, peel the garlic leaving the cloves whole and cut them into 2 parts. In a large bowl pour the potatoes, ribs, garlic, Rosemary and paprika. Season with salt and pepper and seasoned with oil. Mix well with your hands. Transfer everything to a large baking pan, cover with aluminum foil and bake in a preheated oven for about 3 hours at 160°. After 3 hours remove the aluminum foil and raise the oven temperature to 220°. Let them cook for another 45 minutes. Serve the ribs hot!
PRESERVATIONThe ribs can be kept in the fridge for 1-2 days. Freezing is not recommended.
ADVICEYou can prepare them the day before by cooking them for 3 hours as indicated and finish cooking without aluminum foil for the 45 minutes before serving. You can use other spices or herbs to your liking such as sage or thyme.
