Prawns with cherry tomatoes and grilled zucchini
Prawns with grilled cherry tomatoes and zucchini are a very tasty, light and simple second course to prepare. Perfect as a dinner saver, this recipe will conquer all your diners with its delicate taste and low calories. Ingredients
800 g Prawns
250 g Cherry tomatoes
400 g Zucchini
1 clove Garlic
Basil
Extra virgin olive oil
Fine salt
Preparation
Start the preparation of the Prawns with grilled zucchini by cleaning the shellfish. Remove the head, carapace and the internal thread. Place the shrimp tails on a plate and set aside. Wash the zucchini under running water then cut them and slices about half a centimeter thick. Brush the zucchini slices with extra virgin olive oil. Heat a striped plate and place the zucchini. Grill them for about 2 minutes then turn them over to the other side. Put a non-stick pan on the diucco, pour a drizzle of extra virgin olive oil. Add a clove of finely chopped garlic. Fry for a few moments then add the cherry tomatoes cut in half. Season with salt and continue cooking over low heat for about 5 minutes. Place the prawns in the pan and cook everything for another 5 minutes, stirring occasionally. When cooked, add finely chopped fresh basil and ground black pepper. In a serving dish, form a bed of grilled zucchini and place the sautéed prawns with cherry tomatoes on top. Add a drizzle of raw extra virgin olive oil and decorate with a few basil leaves. Serve the Prawns with cherry tomatoes and grilled zucchini to your diners. You can enrich the recipe by adding Taggiasca olives in oil. Another variant can be obtained by sautéing cuttlefish together with shrimp tails and cherry tomatoes.
