Panzerotti with turnip greens, scamorza cheese and sausage
Panzerotti with turnip greens, scamorza cheese and sausage are a delicious and simple leavened product to prepare. Very tasty recipe perfect as a mid-afternoon snack or why not as lunch or dinner. Let's see what we need for the preparation of Panzerotti with turnip greens, scamorza cheese and sausage.
Ingredients
400 g Flour
300 g Water
2 dry brewer's yeast
500 g Turnip greens
200 g Sausage
100 g Scamorza cheese
Fine salt
Extra virgin olive oil
1 clove Garlic
Preparation
Start the preparation of Panzerotti with turnip greens, scamorza cheese and sausage from the dough. Put the flour, salt, dry brewer's yeast and a teaspoon of sugar in a bowl. Mix everything with a spoon. Pour the water into another container, add the flour a little at a time and incorporate it with a spoon. Once you have obtained a homogeneous dough, cover with tissue paper and let it rest for about 15 minutes. After the time has passed, stir the dough with a spoon or a spatula, moving the sides towards the center of the bowl. Cover with tissue paper and repeat the process after another 15 minutes. Cover the bowl again with plastic wrap and place in the fridge to rise for at least 10 hours. After the time necessary for rising, take the dough out of the fridge and transfer it to a well-floured work surface. Divide it into parts of 130 g each and form balls. Flour a large container, place the balls of dough and sprinkle with flour. Cover with plastic wrap and let rise for another 2 hours. After selecting the most tender parts of the turnip greens, wash them under running water and boil them in salted water for about 5 minutes. Drain them and put the part. Place a non-stick pan on the stove with a drizzle of extra virgin olive oil. Add the finely chopped garlic clove and the sausage in chunks. Sauté for a few minutes and add the turnip greens. Continue cooking for about 5 minutes, turn off the heat and let cool. When the dough has doubled in volume, roll it out on a floured work surface. Place some turnip greens, a few pieces of sausage and diced scamorza. Wet the edges with water, close the panzerotti and place them on a baking sheet lined with parchment paper. Brush the surface with extra virgin olive oil and bake in a preheated oven at 230°C for about 20 minutes. Serve the Panzerotti with turnip greens, scamorza cheese and sausage to your diners.
