250 g Flour
Salt
150 ml Water
1/4 Fresh brewer's yeast
Extra virgin olive oil
1 Red peppers
1 Yellow peppers
2 Sausage
100 g Scamorza cheese
Preparation
Start the preparation of the Focaccia with peppers, sausage and cheese from the focaccia dough. In a bowl, add the water and dissolve the yeast. When the yeast is diluted in the water, add the manitoba flour and create a soft batter. Add the salt and mix. Slowly add the flour until you get a homogeneous dough. Knead the dough on a pastry board for at least 15 minutes, then place it in the bowl and let it rise in the refrigerator overnight (at least 10 hours). Bake the pepper in the oven whole, when it is cooked let it cool in a paper bag (or plastic food) in order to better detach the outer skin. Clean the pepper, cut it into strips and place it in a bowl with a drizzle of extra virgin olive oil and salt. When the focaccia dough has risen, roll it out on the pastry board giving it a rectangular shape. Put the slices of cheese on one half of the dough, then the sausage and finally the peppers. Close with the other half and seal everything very well. If you want you can brush the surface of the Focaccia with extra virgin olive oil. Let the Focaccia with peppers, sausage and cheese rise for another 30 minutes, then bake at 220°C for about 20 – 25 minutes. When the Focaccia with peppers, sausage and cheese is cooked, serve it hot. The basic recipe is very simple, you can modify it according to your tastes. Then change the ingredients according to the season. An excellent variant is with pickled artichokes, mortadella and squacquerone. Or zucchini, scamorza cheese and cooked ham. In short, simple and versatile.
