Beef Carpaccio with Orange Oil and Lemon Oil

Carpaccio is an ideal choice in this season and can be prepared with various types of meat, fish, vegetables or fruits. The thin, almost transparent slices can be seasoned in a creative way, allowing us to give free rein to the imagination in the kitchen. In today's recipe, the basis is beef, which must be very fresh and of high quality. It is advisable to use a lean cut with little connective tissue, such as the fillet obtained from the sirloin muscles, but it is also possible to use the loin or loin, or even the walker. Now let's see what we need to make Beef Carpaccio with Orange Oil and Lemon Oil. Ingredients 400 grams of Beef Carpaccio flakes of Parmigiano Reggiano salt pine nuts to taste For the Italian Green Sauce 30 grams of parsley leaves 1 clove of garlic 1 anchovy fillet in oil 4 tablespoons of Orange Extra Virgin Olive Oil 4 tablespoons of Lemon Extra Virgin Olive Oil Preparatuin Carefully prepare the Salsa Verde, start by peeling the parsley, washing the leaves and drying them gently with absorbent kitchen paper. Next, in the mortar, put the parsley leaves, a few at a time, add the garlic clove, the anchovy fillet without the preserving oil, and a pinch of salt. Now, to give the sauce a unique touch, let's choose between Olio & Arancia, the dressing based on Extra Virgin Olive Oil with orange scent, or alternatively Olio & Limone, the dressing based on Extra Virgin Olive Oil with lemon scent. Carefully crush the ingredients with the pestle until you get a homogeneous and fragrant sauce. Prepare the serving dish by arranging the slices of beef harmoniously and add the delicious green sauce previously prepared in the center. To make the carpaccio even tastier, season with a pinch of salt and a drizzle of the Flavored Olive Oil Condiment, to give an additional note of flavor. For an irresistible presentation, add some flakes of Parmigiano Reggiano and, if desired, we can decorate with some pine nuts.
