Potato Croquettes with Mortadella

Ingredients
800 grams of potatoes
200 grams of finely chopped mortadella
150 ml of milk
a knob of butter about 50 grams
100 grams of grated cheese
4 eggs
parsley to taste
breadcrumbs
salt
seed oil for frying
2 mozzarellas of 125 grams
Preparation
Wash the potatoes to remove all traces of soil and boil them in plenty of water. Once cooked, pass them through a sieve. Put them still hot in a bowl with a piece of butter and 150 ml of milk, make a kind of mashed potatoes. Add the chopped mortadella, parsley, 1 egg and 100 grams of grated cheese, season with salt. (if the dough is too soft, add a few tablespoons of breadcrumbs. The consistency of the dough depends a lot on the type of potato used.) Form balls by placing a piece of mozzarella in the center: Close them very well. In the meantime, break 3 eggs into a bowl and beat them with a fork. Season with salt. We pass each ball first in the egg then in the breadcrumbs then again in the egg and breadcrumbs. Fry in plenty of hot oil. Serve them hot like the mozzarella that is inside the row.
