VEGAN PANCAKES WITH BERRIES
Very soft, delicious and super fragrant, the VEGAN PANCAKES WITH BERRIES are perfect for breakfast or snack. The dough is WITHOUT MILK, BUTTER AND EGGS, therefore suitable for everyone's dietary needs and is also sugar-free. To prepare them, just mix all the ingredients in a bowl after which you proceed with cooking in a pan.I served these sweet pancakes with vegetable yogurt and berries previously cooked... you will see these pancakes are really delicious! Ingredients
200 g type flour 250 ml oat drink (or sugar-free soy)10 g baking powder1 pinch salt1 tbsp seed oil2 teaspoons fine sugar 80 g berries (frozen)
Topping for two people125 g soy yogurt (white or as you prefer)100 g berries (frozen)2 teaspoons fine sugar 2 tbsp lemon juice
Preparation
First pour the flour, baking powder, pinch of salt and fine sugar into a bowl. Mix with a hand whisk then add the vegetable drink of your choice and the berries. Mix everything together to make the dough smooth and set aside for a moment. Grease a pan with a drop of seed oil and remove the excess with paper towels. Then pour half a ladle of dough, close with a lid and cook over medium-low heat for about 1 minute. As soon as bubbles appear on the pancake, it means that you have to turn it with a spatula and cook it on the other side for another 30-40 seconds. The pancake should be nice cooked as in the photo. Move the pancake to a plate and continue cooking until the dough is finished. Separately, in a pan, cook the berries with the fine sugar and lemon juice for 3-4 minutes. Let it cool well. Serve the pancakes with the vegetable yogurt and berries. You will see how good they are!
