Sicilian baked black olives



Sicilian baked black olives are an easy and delicious appetizer that cannot be missing at the table! Ingredients

300 g large black olives
4 table spoons extra virgin olive oil
4 cloves garlic
1 tablespoon oregano
salt and pepper

Steps

To treat black olives and remove the bitterness so you can eat them, choose nice large and fleshy olives, then get a large colander or basket. Place the cleaned olives in layers with plenty of coarse salt between layers. Some prick the olives with a fork to help them salt, but I also tried not to do it and they are good all the same. You will see that the olives will begin to lose liquid, so every day for a few days give the olives a good stir and let them flavor. You will see that the olives will gradually take on those characteristic "wrinkles", so after a few days try to taste them (after rinsing them) to test their degree of sweetness. This is also a good way to preserve black olives in case you have a lot of them. You can also freeze them rinsed and dried and take them out a few hours before if necessary. When the olives have reached the right degree of sweetness, put them in a bowl, then add the oil, the poached garlic and finally season with salt and pepper. Then sprinkle with oregano and mix well to flavor them. Place the olives thus seasoned in a baking tray lined with baking paper, then bake at 180 ° C in static mode for about 15 minutes. Finally, take the olives out of the oven and let them cool completely before serving. You will see that the Sicilian-style baked black olives will be very popular at the table and you will make a great impression!
